The 2017 Reserve Cabernet Sauvignon is 100% Cabernet Sauvignon. The captivating aromas and luscious flavors of blueberry, blackberry, mocha, cedar, vanilla seem so generous upon entry. The finish is just as exceptional with long and fine grain tannins that capture the attention and hold it in focus. I truly love the wines depth and richness as it dances across the palate.
This rugged hillside fruit is combined with most delicate and refined barrel from Radoux Cooperage; being aged thirty months on medium toast wood was instrumental with the wines bouquet.
Drink now thru 2032. Optimum time 2023-2028

VARIETAL BLEND 100% Cabernet Sauvignon
FERMENTATION 5 days cold soak prior to native yeast fermentation. After a 5 brix drop in sugar a domesticated yeast is added to ensure a strong finish to the fermentation. After 17 days fermentation is complete. No extended maceration is done
COOPERAGE Radoux Selection Barrel. ExtraTight Grain (22mm).
3 year aged wood Medium Toast. Non Toasted Heads.
AGING 100% New French Oak. 30 Months in barrel. Bottled Feb. 25th, 2021
