2018 Icaria Creek Cabernet Sauvigon
WINEMAKER TASTING NOTES
Our 2018 has beautiful black color turning to ruby red towards the rim. Tantalizing aromas of chocolate covered boysenberries and blackberries, vanilla, sage and pine fill the glass. Mid palate, rich black fruit, exotic spices on the mid palate. The finish is silky with earth, cedar box and fine tannins that round out the wine to it’s completion.
This rugged hillside fruit presents a mouthful of generous age-worthy structure of mineral and graphite. The extended hang time provides a wonderful mid palate of sweet berries that seem to linger on the palate forever.
Drink now thru 2028. Optimum time 2022-2025.
2018 ICARIA CABERNET SAUVIGNON TECHNICAL INFORMATION
APPLELLATION Alexander Valley, Sonoma County
VARIETAL BLEND 78% Cabernet Sauvignon, 15% Merlot, 7% Malbec
FERMENTATION 5 days cold soak prior to native yeast fermentation. After a 5 brix drop in sugar a domesticated yeast is added to ensure a strong finsih to the fermentation. After 17 days fermentation is complete. No extended maceration is done.
