2016 Pinot Noir
Winemaker Notes ~
This 2016 Pinot Noir from Russian River Valley is like a bowl of fresh strawberries and raspberries with subtle aromas of vanilla and exotic spices The mouthfeel is silky in texture and the tannins are soft yet complex.
For this 2016 Pinot Noir, five bins were harvested. One bin was left as whole cluster, which was layered in the bottom of the tank with the other four bins de-stemmed as whole berry on top.
This process known as carbonic maceration, where whole grape clusers are placed on the bottom of the tank and the oxygen is displaced by carbon dioxide. Fermentation starts on a intracellular level inside the berry, producing alcohol and fruity aromatics. The weight of the grapes on the top crushes the grapes on the bottom and yeasts ferment the juice.
By leaving one bin of whole cluster fruit, we are able to obtain the desired fruit flavors. The remaining crushed fruit brings structure and tannins for a balanced Pinot Noir.
