Winemaker Notes ~
The 2015 Reserve Cabernet Sauvignon has luscious black cherry and blueberry aromas. The flavors have melded with the mocha, vanilla, leather and exotic spices. The fine grain tannins from the grape skins, wood tannins and seed tannins are showing wonderful harmony and great structure. The juicy berry flavors so finely laced within the firm tannins. The bright acidity keeps all of the berry flavors and firm tannins well into focus. I truly love the wines depth and richness and the way it dances across the palate.
This rugged hillside fruit is combined with most delicate and refined barrel from Radoux Cooperage; being aged twenty eight months on medium toast wood was instrumental with the wines bouquet.

APPELLATION Alexander Valley Hillside, Sonoma County
VARIETAL BLEND 78% Cabernet Sauvignon, 15% Merlot, 7% Malbec FERMENTATION 5 days cold soak prior to native yeast fermentation. After a 5 brix drop in sugar a domesticated yeast is added to ensure
a strong finish to the fermentation. After 17 days fermentation is complete. No extended maceration is done
COOPERAGE Radoux Selection Barrel. ExtraTight Grain (22mm).
3 year aged wood Medium Toast. Non Toasted Heads.
AGING 100% New French Oak. 28 Months in barrel prior to bottling and aged 9 months in bottle prior to March 1st, 2019 release.
